Cupcake Ingredient Spotlight: Peach Cobbler Cupcakes

Summer is the best time to practice your cupcake recipes because you can involve the kids in baking. Teach them about measurements and baking becomes an educational experience. During the summer months you have more time to play around with recipes and learn the basics. Then by the time September rolls around and your little kitchen helpers are back in the classroom you’ve already mastered your cupcakes.

As she clearly states in her disclaimer, these cupcakes take both freezer space and a lengthy prep time. But boy do they look beautiful when they’re finished! Speaking of ganache, we found an easy recipe for ganache from Martha Stewart today.  If you’re still wondering what ganache is: ganache is a creamed chocolate mixture that can be used for baking. It creates a luxuriously smooth topping for cupcakes, cakes and pastries. It seems a lot harder to make than it looks. Once you get the hang of it you can make a quick batch of ganache for any cupcake recipes. Plus, you can whip or pipe ganache into frosting form.

Back to the original recipe, peanut butter ganache is used to top off these frozen cupcake treats. These will be perfect this weekend for a birthday party we have planned. Normally we’re a fan of warm chewy fudge cupcakes but hopefully these frozen treats will be a delicious alternative. What do you think? Ice cream is the quintessential summer dessert but it sure seems to upstage cupcakes more than we’d like. So when we came across this recipe for cake batter ice cream cupcakes, we were delighted. Not only are ice cream cupcakes simply amazing but cake batter with ice cream makes a chewy sweet combination. The best part about ice cream cupcakes is you can incorporate any flavor ice cream you choose. We wanted to show off this cupcake recipe because it really does seem to show of the bright happy-go-lucky feel of summer.

Bake according to your instructions, ten minutes should do the trick since you’re not cooking the full cupcake.

Once the cupcake bottoms have cooled, top each cupcake with a scoop of ice cream. This recipe obviously uses cake batter ice cream but be creative and play around! Our local cupcake shop had the brilliant idea to also serve mini cheesecakes and since then we’ve noticed them more often. One bite of strawberry mini cheesecake and all the troubles in the world seem to disappear. The tightened pants’ line might have a reason when we think about it. Anyways, back to the point: mini cheesecakes are amazing. You can make these mini cheesecakes using your favorite cupcake liners and cupcake flavors. Strawberry cheesecake, cookies N cream cheesecake and original are all among the most popular favors.

Our favorite, and the most recent obsession on Pinterest, are cookies n cream cheesecakes. These small bite size cheesecakes have a whole cookie at the bottom! The recipe, from Martha Stewart, calls for an oreo cookie but you could use a chocolate chip too. The recipe is pretty simple when you think of it: mix your favorite cheesecake recipe, add an oreo cookie to the bottom of your cupcake liner and bake accordingly. The oreo cookie substitutes for the graham cracker crust. These would be great with a vanilla wafer at the bottom! Best cookie bottoms: oreo, vanilla wafer and hmm… graham cracker bears! Whatever cookie you decide to bake, remember they can be seen from the bottom so make the pattern face down.

Putting together these cheesecakes would be a sweet treat for a summer picnic. You can make a few fun cookies n cream cheesecakes and then separate each into an individual cupcake box. Pack a few in the ice box and voila you have a portable dessert. Cupcake packaging makes sending your special someone off to work or school with a treat, much much easier. You no longer have to worry about smashed cupcakes and smeared frosting. Plus, any of these packages will put a smile on their face, especially when you pair it with a sweet note. Salted Caramel Frosting Recipe + Autumn Apple Cider Cupcakes!

Every now and then we come across a frosting recipe that makes us drool. This salted caramel frosting recipe is no exception. It’s simple, if you know how to make caramel, and it can be applied to any cupcake recipe you choose. First things first you must be comfortable making caramel. You have to stand and watch it so that it doesn’t burn. Don’t be embarrassed if it takes you a few tries because it can be tricky.

Originally, you would think that if tonic water glows you can use it in your frosting as a base. But it has a bitter taste and your frosting will turn out too runny. So instead of adding tonic water to the entire recipe, she incorporates a way to dip your frosted cupcakes into a tonic water gelatin. After the cupcake frosting has cooled and hardened it is able to soak up the gelatin. Repeat this process a few times to achieve a strong glow. Cooled cupcakes can be taken out before your party for a great black light display.

Before a small girl named Dorothy ever touched down in Oz, there were two fabulous witches. As you know, when Dorothy arrived in Oz her house landed on the Wicked Witch of the East, unfortunately crushing her. But if you’ve read the Wicked books or seen the amazing Wicked musical then you know there’s more to the story. Last weekend we had the opportunity to attend the Wicked show and boy, were we blown away. The story is completely different than The Wizard of Oz because instead of focusing on Dorothy and her companions, it tells the story before her arrival.

Congratulations to Cupcake Champion Wonderland Custom Cakes!

As we announced a couple weeks ago, Cupcake Wars put together an all-out duel between all the Cupcake Wars winners. The winner is crowned Cupcake Champion. The battle for “cupcake supremacy” aired in on the Food Network every Sunday night in June. Sunday was the final episode and crowned Wonderland Custom Cakes the cupcake champion. In addition to the honor of being known as the champion, the winner also goes home with $50,000 in cash and prizes. That’s worth a few cupcakes in our book.
